About Me

My photo
A long time ago, I was a child. (I started out as Cathy First from Colon, Mi.) For the past several years I’ve been an adult. A lot of things went on between those two stages of life; probably no more or no less than anyone elses. My husband and I moved to “da U .P” from southern Lower Michigan several years ago (yes we were trolls at one time). We owned and operated and operate Clementz’s Northcountry Campground and Cabins just north of Newberry, Michigan until May 2015. We have grown kids and grandkids (who all live downstate). My passion is life and all that Nature has to offer us and trying to photograph it in unique ways. Our intention in life is to see all that Nature has to offer us. We hope that you will be a part of our adventures as we cruise through our lives together. Come back often!

IRRESISTIBLE CHOCOLATE CAKE

1 CUP MARGARINE
1 CUP WATER
2 CUP SUGAR
2 CUP FLOUR
¼ CUP COCOA
1 TSP BAKING SODA
1 TSP VANILLA
½ TSP SALT
½ TSP CINNAMON
½ CUP SOUR MILK
2 SLIGHTLY BEATEN EGGS

IN CAUCEPAN, COMBINE MAGARGINE AND WATER. HEAT TO BOILING. STIR TO MELT BUTTER. In mixing bowl mix sugar, flour, cocoa, soda, vanilla, salt and cinnamon (I actually use about ¾ tsp). Add hot mixture and stir till smooth. Add sour milk and eggs, beating by hand till smooth. Pour into greased 13x9 baking pan. Bake at 350 about 30 minutes. Cool cake and frost with the following….

MELT ½ CUP MARGARINE WITH 10 LARGE MARSHMALLOWS OR 1 CUP MINI MARSHMALLOWS. REMOVE FROM HEAT. ADD ¼ CUP COCOA, 1/3 CUP MILK, 2 TSP VANILLA AND 4-4 ½ CUPS POWDERED SUGAR (I PROBALBY USE MORE THAN THIS AMOUNT BECAUSE WE LIKE IT A BIT THICKER). Pour over cake. Let set 4 hours…yeah, right. Let set 4 hours??? I hardly think so!!! After you’ve licked the spoon and scraped out the pan that you mixed the frosting in (which you KNOW you will do!!) you won’t want to let it set for 4 hours!

Just an FYI, there are two or three other new posts and some photos after this one; scroll down!!

If you make this cake, let me know what you think about it!

  1. How did you make the mild sour? By adding vinegar to it?
I will have to print this out when we get back and try it!
